Ube Halaya

Ube halaya is the basis for most ube desserts, and closest to its purest form. It is basically a filipino purple yam jam, which can be used as a spread, used to make desserts, or simply set into a pan/mold as a a fudgy dessert enjoyed with a spoon.

Ingredients

  • 1 16 oz (1 lb) package frozen grated ube, thawed
  • 1/2 cup granulated sugar
  • 1 can of condensed milk
  • 1 can of evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp McCormick ube extract
  • 1/4 cup butter
  • 1/4 tsp salt

Instructions

  1. In a large sauce pan over medium heat, combine the frozen ube, sugar, condensed milk, evaporated milk, whisking together until the ube is broken apart and fully incorporated. 
  2. Simmer mixture, stirring occasionally until mixture thickens and becomes a darker purple color.
  3. Add both vanilla & ube extract, salt, and 1/4 cup of butter.
